Grown from a place of nostalgia and familial love, Louise’s traditional French cuisine, reimagined, provides honest cooking with which Chef Royer was brought up. All ingredients are personally sourced by Royer from farmers and producers who span generations, and he introduces cooking techniques that bridge the gap between fine dining and a way of eating which can be enjoyed every day.
Set in a two-storied heritage-listed house within the gardens of Hong Kong’s PMQ, Louise is collaboration between Yenn Wong, Founder of JIA Group and Chef Julien Royer, recently honoured with the No. 1 position in the “Asia’s 50 Best” awards with his 2-Michelin star Singapore restaurant Odette.
Acclaimed architect Andre Fu has transformed the heritage building into an intimately chic colonial home for the restaurant. Welcoming guests into her home, Louise offers relaxed all-day dining and drinks in the Tropical Greenhouse Lounge or an invitation to the upstairs dining room where lunch and dinner are served a la carte. Louise的菜式風格可總括為「傳統法國料理 – 重新想像」，源自大廚Julien Royer從小接觸、充滿愛意而樸實的家庭烹飪。餐廳食材均由Royer親自向農場及幾代相傳的手工生產商採購，以精湛手藝烹調，拉近精緻餐飲及日常飲食文化的差距，讓大眾每日享受。
餐廳位於香港元創方(PMQ) 的兩層高歷史古蹟內，被花園圍繞，是佳民集團創辦人黃佩茵 (Yenn Wong) 及大廚Royer二人的「心血結晶」。大廚Royer在新加坡的餐廳Odette得到米芝蓮三星榮譽，亦被選為「亞洲50大餐廳」的榜首餐廳。
得獎建築師傅厚民 (Andre Fu) 把把兩層高的歷史建築改造成別緻舒適的空間，帶來時尚家居感覺。賓客可在下層的熱帶溫室風格沙發酒廊，享受全日供應的美味休閒餐飲。或移步至上層以象牙色小客廳為設計風格的餐廳 ，品嚐午餐和晚餐的單點菜式。"
